Here is my personal recipe for 2 servings
1/2 cup sticky rice (Jasmine) cooked to perfection
2 cups iceberg lettuce (or more)
1/4 cup edamame beans
1/2 cup cubed cucumber
1/2 cup yellow mango
1/2 cup grated carrot.
1/2 cup diced red bell pepper
2 green onions, minced
1/2 of an avocado
2 quarter limes
150 g fresh tuna (marinated)
toasted sesame, salt and pepper to taste
Tuna marinade
75 ml (1/4 cup) soy sauce
75 ml (1/4 cup) hoisin sauce
75 ml (1/4 cup) rice vinegar
5 ml (1 tsp.) sambal oelek
5 ml (1 tsp) sugar
30 ml (2 tbsp) lime juice
30 ml (2 tbsp) toasted sesame oil
Salt and pepper, to taste
Preparation
1. Cook the rice according to the supplier's instructions.
2. Marinade
Mix all the ingredients for the marinade and put it in a bowl with an airtight lid.
Cut the tuna into cubes of about 1cm x1cm
Add the tuna to the marinade, close the lid and leave in the fridge for 15 minutes (just enough time to prepare the rest of the ingredients)
3. Cut and prepare food
Cut all the ingredients
Divide rice between 2 bowls and top with lettuce.
Arrange the ingredients in an aesthetic way: mango, red pepper, avocado, cucumber, carrot, edamame beans, green onion.
Finished by adding one portion of marinated tuna on top, sprinkle with sesame seeds and garnish with a 1/4 of a lime.
Sauce (optional)
125 ml (1/2 cup) mayonnaise
30 ml (2 tbsp.) water
2 ml (1 tsp.) Sriracha sauce (add more if you like spicier dishes)
